For May the recipe is for

Vanilla & Raspberry Creme Brule

Makes 6

Ingredients

430 ml Double Cream
6 Egg Yolks
50g
1 Vanilla Pod
1 Punnet of Raspberrys

Method
1) Bring the Cream and the Vanilla Pod to the boil

2) Whisk the Egg Yolks with the sugar until white

3) Once the cream has come to the boil, add to the egg yolk

4) Place the mixture back on the heat until it thickens, you want it to coat the back of your spoon.

5) Pour the mixture into your dishes and leave to chill in the fridge for a minimum of 6 hours, ideally leave over night.
